  • 2 cups diced potatoes

  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the turkey bacon until crispy. Remove and crumble.
  3. Add potatoes, onion, and bell pepper to the skillet. Sauté until vegetables are tender.
  4. In a bowl, whisk together milk, eggs, salt, and pepper.
  5. In a greased casserole dish, combine all ingredients including turkey bacon and shredded cheese.
  6. Pour the milk mixture over the top.
  7. Bake for 45 minutes or until set and golden brown.

Notes

  • For added flavor, substitute half of the turkey bacon for regular bacon.
