  • 1 1/2 cups Biscoff cookies, crushed
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup Biscoff spread

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the crushed Biscoff cookies with melted butter and press into the bottom of a springform pan.
  3. In another bowl, beat the cream cheese until smooth, then add powdered sugar and vanilla extract, and mix until combined.
  4. In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  5. Mix in the Biscoff spread until well incorporated.
  6. Pour the cheesecake filling over the crust and smooth the top. Bake for 45 minutes.
  7. Let the cheesecake cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, add more Biscoff spread on top before serving.
  • Serve with whipped cream for added indulgence.
