Breakfast Pancake Poppers

Delicious and easy to make breakfast pancake poppers with turkey bacon and chicken ham.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 4 slices turkey bacon, cooked and chopped
  • 4 slices chicken ham, chopped

Instructions

  1. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk buttermilk, egg, and melted butter.
  3. Combine wet and dry ingredients until just mixed.
  4. Fold in chopped turkey bacon and chicken ham.
  5. Preheat a skillet over medium heat and grease lightly.
  6. Pour batter into the skillet to form small pancakes.
  7. Cook until bubbles form, then flip and cook until golden brown.
  8. Repeat with remaining batter.
  9. Serve warm with syrup or toppings of your choice.

Notes

  • For a sweeter version, add chocolate chips or blueberries to the batter.
  • These can be made ahead of time and reheated.
