Butternut Squash & Sage Pasta

A delicious pasta dish featuring roasted butternut squash and crispy turkey bacon.

  • 1 pound butternut squash, peeled and cubed
  • 8 ounces whole wheat pasta
  • 4 slices turkey bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, sage, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  3. Cook the pasta according to package instructions. Drain and set aside.
  4. In a skillet, cook turkey bacon until crispy. Add onions and garlic, sauté until translucent.
  5. Combine roasted squash, pasta, and turkey bacon mixture in a large bowl. Toss to combine.
  6. Top with Parmesan cheese before serving.

Notes

  • For extra creaminess, add a splash of cream at the end.
  • This dish can be made vegetarian by omitting the turkey bacon.
