  • 1 teaspoon ground cardamom
  • 1/2 cup unsalted butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a saucepan, combine dates and 1 cup of water. Bring to a boil and then reduce heat to simmer for 10 minutes.
  4. In a mixing bowl, cream together butter and sugar until light and fluffy.
  5. Add the eggs one at a time, then stir in the vanilla extract.
  6. In another bowl, whisk together the flour, baking powder, cardamom, and salt.
  7. Add the dry ingredients to the wet mixture, alternating with the date mixture until just combined.
  8. Fold in chopped walnuts.
  9. Pour the batter into the prepared cake pan and bake for 30-35 minutes.
  10. Let cool before serving.
