Cheesecake Factory Key Lime Cheesecake Recipe

A refreshing and easy-to-make cheesecake inspired by the famous Cheesecake Factory Key Lime Cheesecake.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup key lime juice
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 tablespoon key lime zest

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Mix graham cracker crumbs, melted butter, and sugar in a bowl.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. In a large bowl, beat the cream cheese until smooth and creamy.
  5. Add the sugar, key lime juice, and vanilla; mix until combined.
  6. Incorporate the eggs one at a time, mixing well after each addition.
  7. Pour the cheesecake filling into the crust.
  8. Bake for 60 minutes or until the center is set.
  9. Allow to cool and then refrigerate for at least 4 hours before serving.
  10. Top with sour cream and key lime zest before serving.

Notes

  • For best results, use fresh key limes for the juice.
  • This cheesecake can be made a day in advance.
