Cheesy Taco Potatoes

Delicious cheesy taco potatoes that satisfy cravings and are perfect for any meal.

  • 4 large potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup chopped green onions
  • 1/2 cup diced tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake them for about 45-60 minutes until tender.
  3. While the potatoes are baking, brown the ground beef in a skillet over medium heat.
  4. Add the taco seasoning to the meat and follow package instructions to prepare.
  5. Once the potatoes are done, cut them open and fluff the insides with a fork.
  6. Scoop in the seasoned beef, then top with cheddar cheese, sour cream, green onions, and tomatoes.
  7. Return to the oven for an additional 5-10 minutes to melt the cheese.
