Chi-Chi’s Baked Chicken Chimichangas

A delicious and easy recipe for baked chicken chimichangas inspired by Chi-Chi’s famous dish.

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheese
  • 1 cup salsa
  • 1 tablespoon taco seasoning
  • 8 flour tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the chicken, cheese, salsa, and taco seasoning.
  3. Place a tortilla on a flat surface, add a portion of the filling, and roll it up tightly.
  4. Brush the outside with olive oil and place seam-side down on a baking sheet.
  5. Bake for 20-25 minutes or until golden brown.
  6. Serve warm with additional salsa on the side.
