3 ripe bananas
1/3 cup melted butter
1 teaspoon baking soda
pinch of salt
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup brown sugar
Instructions
Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a mixing bowl, mash the ripe bananas with a fork until smooth.
Mix in the melted butter.
Add in the baking soda and salt. Stir well.
Mix in the sugar, egg, and vanilla extract until fully combined.
Add the flour and stir until just incorporated.
In a separate bowl, mix the cinnamon and brown sugar.
Pour half of the batter into the prepared loaf pan, sprinkle half of the cinnamon-sugar mixture, then add the rest of the batter and top with the remaining cinnamon-sugar.
Bake in the preheated oven for about 60 minutes, or until a skewer comes out clean.
Let cool before slicing.
