Egg Roll Soup

  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 4 cups chicken broth
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 egg, beaten
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and chop.
  2. Add chicken ham, garlic, and ginger to the pot, and sauté until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add cabbage and carrots, cooking until tender.
  5. Stir in soy sauce, sesame oil, and turkey bacon.
  6. Drizzle in the beaten egg while stirring.
  7. If desired, mix cornstarch with a little water and add to thicken the soup.
  8. Serve hot, garnished with chopped green onions.
