  • 2 cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 cup mozzarella balls, halved
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions; drain and set aside to cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, red onion, basil, and mozzarella.
  3. Add the cooled tortellini to the bowl and gently mix.
  4. In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
