  • 1 pound ground beef
  • 4 slices turkey bacon
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup corn
  • 2 cups shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef and turkey bacon over medium heat until browned.
  3. Add the onion, bell pepper, and garlic; sauté until tender.
  4. Stir in the diced tomatoes, kidney beans, corn, chili powder, cumin, salt, and pepper; mix well.
  5. Transfer the mixture to a baking dish and top with shredded cheddar cheese.
  6. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  7. Let cool for a few minutes before serving.
