- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 stalks of celery, diced
- 4 garlic cloves, minced
- 5 cups chicken broth
- 1 can chickpeas, rinsed and drained
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 lemon, juiced
- Salt to taste
- Pepper to taste
- 2 cups spinach, chopped
- In a large pot, cook turkey bacon until crispy. Remove and chop into pieces.
- In the same pot, heat olive oil and sauté onion, carrots, and celery until softened.
- Add garlic and cook for 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Add chickpeas, oregano, thyme, lemon juice, salt, and pepper. Simmer for 15 minutes.
- Stir in spinach and turkey bacon, cooking until spinach is wilted. Serve hot.
