Mexican Street Corn Pasta Salad

A delicious and easy Mexican Street Corn Pasta Salad perfect for summer BBQs.

Ingredients

  • 2 cups cooked pasta
  • 1 cup corn, roasted
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 cup turkey bacon, cooked and crumbled
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large mixing bowl, combine the cooked pasta, corn, cherry tomatoes, red onion, cilantro, and turkey bacon.
  2. In a separate bowl, mix together the mayonnaise, lime juice, chili powder, garlic powder, salt, and black pepper.
  3. Pour the dressing over the pasta salad and toss until everything is well coated.
  4. Top with crumbled cotija cheese and serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

  • This salad can be made a day in advance for improved flavor.
  • Feel free to add additional vegetables like bell peppers or jalapeños for extra crunch.
