  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 cup chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In another bowl, beat together sugar and cream cheese until smooth.
  4. Add vanilla extract and eggs, one at a time, mixing well after each addition.
  5. Fold in sour cream and flour until combined.
  6. Pour the cream cheese mixture over the crust and smooth the top.
  7. Bake for 45-50 minutes, or until the center is set but still slightly jiggly.
  8. Remove from the oven and let cool to room temperature.
  9. For the topping, heat heavy cream and stir in chocolate chips until melted and smooth.
  10. Spread the chocolate ganache over the cooled cheesecake and chill for at least 4 hours before serving.
