- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 3 packages (8 ounces each) cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/4 cup all-purpose flour
- 1 cup chocolate chips
- 1/2 cup heavy cream
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
- In another bowl, beat together sugar and cream cheese until smooth.
- Add vanilla extract and eggs, one at a time, mixing well after each addition.
- Fold in sour cream and flour until combined.
- Pour the cream cheese mixture over the crust and smooth the top.
- Bake for 45-50 minutes, or until the center is set but still slightly jiggly.
- Remove from the oven and let cool to room temperature.
- For the topping, heat heavy cream and stir in chocolate chips until melted and smooth.
- Spread the chocolate ganache over the cooled cheesecake and chill for at least 4 hours before serving.
