Mini Jalapeño Popper Egg Rolls

A delicious twist on a classic appetizer, these Mini Jalapeño Popper Egg Rolls combine the creaminess of jalapeño poppers with the crunch of egg rolls.

Ingredients

  • 8 ounces cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced jalapeños
  • 8 slices turkey bacon, cooked and crumbled
  • 14 egg roll wrappers
  • 1 egg, beaten for sealing
  • oil for frying

Instructions

  1. In a bowl, mix cream cheese, cheddar cheese, diced jalapeños, and crumbled turkey bacon.
  2. Place about 2 tablespoons of the mixture into the center of each egg roll wrapper.
  3. Fold and seal the wrappers with beaten egg.
  4. Heat oil in a pan and fry the egg rolls until golden brown.
  5. Drain on paper towels and serve hot.
