My Favorite Easy Banana Muffins

These banana muffins are a healthy treat, perfect for breakfast or a snack!

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin pan.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add melted coconut oil to the mashed bananas and mix well.
  4. Stir in the sugar, egg, and vanilla extract until combined.
  5. In another bowl, mix the baking soda and salt into the flour.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in walnuts if using.
  7. Pour the batter into the prepared muffin pan, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow to cool before serving.

Notes

  • These muffins can be enjoyed warm or at room temperature.
  • Perfect for freezing, so make a double batch!
