- 3 ripe bananas
- 1/3 cup melted coconut oil
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped walnuts (optional)
- Preheat your oven to 350°F (175°C) and grease a muffin pan.
- In a mixing bowl, mash the bananas until smooth.
- Add melted coconut oil to the mashed bananas and mix well.
- Stir in the sugar, egg, and vanilla extract until combined.
- In another bowl, mix the baking soda and salt into the flour.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in walnuts if using.
- Pour the batter into the prepared muffin pan, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
