2 cups Biscoff cookies, crushed
1/2 cup unsalted butter, melted
24 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1/2 cup Biscoff spread
Instructions
In a bowl, combine crushed Biscoff cookies and melted butter. Press mixture into the bottom of a lined 9×9 inch pan.
In a large mixing bowl, beat cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.
In another bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
Spread the cream cheese mixture over the cookie crust in the pan.
Drizzle Biscoff spread on top and swirl it through with a knife.
Refrigerate for at least 4 hours or until set. Cut into bars and serve.
Notes
For best results, let the cheesecake bars chill overnight.
Store leftover bars in an airtight container in the refrigerator.
