  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 4 cups beef broth
  • 4 large carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the beef chuck and brown on all sides.
  3. Stir in the onions and garlic and cook until fragrant.
  4. Add the broth, carrots, potatoes, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for about 2 hours or until the beef is tender.

Notes

  • This stew can be made a day ahead and tastes even better the next day.
  • For thicker stew, mix 1 tablespoon of cornstarch with water and stir in during the last 10 minutes of cooking.
