- 2 pounds beef chuck, cut into 1-inch cubes
- 1 tablespoon vegetable oil
- 4 cups beef broth
- 4 large carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
