  • 1/2 cup green chilies, diced
  • 1 cup onion, diced
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1/2 cup vegan cheese, shredded

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine the mashed potatoes, green chilies, onion, garlic powder, cumin, and chili powder.
  3. Warm the tortillas slightly to make them pliable.
  4. Spoon the potato mixture onto each tortilla and roll them up tightly.
  5. Place the rolled tortillas in a baking dish and cover with enchilada sauce.
  6. Sprinkle the vegan cheese on top.
