Quick Southwest Chicken Salad

A delicious and quick Southwest Chicken Salad with turkey bacon and avocado that brings a burst of flavor to your meal.

  • 2 cups cooked chicken, chopped
  • 4 slices turkey bacon, cooked and crumbled
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or frozen
  • 1 bell pepper, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup black beans, rinsed and drained
  • 1/3 cup Greek yogurt or sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked chicken, turkey bacon, avocado, cherry tomatoes, corn, bell pepper, cilantro, and black beans.
  2. In a separate bowl, mix together the Greek yogurt, lime juice, cumin, chili powder, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine all ingredients.
  4. Serve immediately, or chill in the refrigerator for 30 minutes to meld the flavors.
