- 1 cup rotisserie chicken, shredded
- 2 cups mushrooms, sliced
- 1 cup carrots, diced
- 1 cup celery, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat.
- Add garlic, carrots, celery, and mushrooms. Sauté until softened.
