  • 2 cups mushrooms, sliced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add garlic, carrots, celery, and mushrooms. Sauté until softened.
  3. Stir in the shredded rotisserie chicken.
  4. Add chicken broth and thyme. Bring to a simmer.
  5. Stir in heavy cream and simmer for another 5 minutes.
  6. Season with salt and pepper to taste. Serve hot.
