Ingredients

  • 1 bulb fennel
  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • Freshly ground pepper to taste

Instructions

  1. Using a mandoline, shave cucumbers and fennel into thin slices.
  2. In a large mixing bowl, combine shaved cucumbers, fennel, olives, and feta cheese.
  3. Drizzle olive oil and lemon juice over the salad, then season with salt and pepper.
  4. Toss gently to mix all ingredients well.
  5. Chill in the refrigerator for 15 minutes before serving.
