A delicious and easy-to-make breakfast casserole featuring spinach and turkey bacon, perfect for a hearty morning meal.

  • 6 slices turkey bacon
  • 1 cup shredded mozzarella cheese
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup diced tomatoes
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the turkey bacon until crispy, then crumble.
  3. In a mixing bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
  4. Add spinach, tomatoes, oregano, crumbled bacon, and cheese to the egg mixture.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 30-35 minutes until the center is set and the top is golden.
  7. Allow to cool slightly before slicing and serving.

Notes

  • For a vegetarian option, omit the turkey bacon.
