- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ¾ cup fresh strawberries, pureed
- ¼ cup fresh strawberries, chopped
- ½ cup sour cream
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Pour half of the cream cheese mixture over the crust. Swirl in the pureed strawberries. Pour the remaining mixture on top.
- Bake for 55-60 minutes or until the center is set. Let it cool.
- Top with chopped strawberries and sour cream.
- Chill in the refrigerator for at least 4 hours before serving.
