Twice Baked Breakfast Potatoes

Delicious twice baked breakfast potatoes filled with turkey bacon and chicken ham for a satisfying morning meal.

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1/2 cup cooked chicken ham, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes with a fork. Bake for 45-60 minutes until tender.
  3. While the potatoes are baking, cook the turkey bacon until crispy. Crumble and set aside.
  4. Once the potatoes are done, let them cool slightly. Cut them in half lengthwise and scoop out the insides into a bowl.
  5. Add the chicken ham, cheese, sour cream, green onions, garlic powder, and black pepper to the potato insides. Mix until well combined.
  6. Refill the potato skins with the mixture and top with additional cheese and bacon if desired.
  7. Bake the stuffed potatoes for an additional 15-20 minutes, until heated through and golden on top.

Notes

  • For a spicy kick, add jalapeños to the filling.
  • Feel free to substitute ham with other cooked meats or vegetables.
